A pseudocereal originating in South America, amaranth was known and cultivated thousands of years ago, but its outstanding nutritional value was only recognized about 40 years ago. Amaranth is gluten-free, so it is safe for people with gluten sensitivities to consume. Polyunsaturated fatty acids predominate. Amaranth has an exceptionally high iron content compared to other grains. It is also a noteworthy source of calcium, magnesium and zinc.
How to use: Enjoy mixed into muesli, or use it to make cakes, biscuits or energy bars. It can also be used for breading and making fillings.
