A silky-textured, gluten-free flour. It is usually mixed with other flours for baking. Rice flour works well in crumbly, tender pastries, but it can also be used to make dumplings, pancakes, and cream soups. It is also excellent for sweet pastries and can be used to thicken sauces. Rice noodles, a common ingredient in Chinese cuisine, are also made from rice flour. When added in small quantities to buttery shortcrust pastry, it makes it exceptionally crumbly and tender, giving it a melt-in-your-mouth texture. It makes yeasted doughs heartier and denser.
