Wheat gluten is an elastic, swelling substance that enables wheat flour to be used to bake beautiful, tall loaves of bread. Wheat gluten can also be seasoned appropriately to make wheat meat (seitan). When breaded and fried or baked, it makes a topping with a texture and flavour similar to meat.

Uses: to improve low-gluten flours (e.g. for breadmaking) and to make seitan.
