Genmai Miso is a Japanese miso with a distinctive flavor, made from whole soybeans and brown rice.
Depending on the region and climate where the miso is made, the master brewer’s expertise and experience determine when the miso has reached optimal maturity. This can range from 6 months during the hot summer season in some prefectures to 18 months in colder regions.
